Presenting: Tapiche Tamales!

Straight from the kitchen at the Tapiche Jungle Lodge, we present to you our Tapiche tamales!

After careful planting and cultivation, we've had a great corn harvest this 2019 season at the Tapiche Reserve in the northern Amazon of Peru. Here's a behind-the-scenes look at the preparation of the tamales that our guests will have for dinner! We've combined ancient Mexican wisdom about processing corn with Peruvian flavors and some jungle flair, using the materials and ingredients that we have on hand. The corn was grown in a patch right at the lodge and ground by hand to provide a pure, organic treat for our visitors. Verdi our cook packs the tamales while Don Pepe assists.
